Phillips agrees that knowledge is the most important thing he looks for when looking for good fish and chips on his own. “I ask where the fish come from,” he says. “Is he captured durably? Does it have MSC certification? In what oil is it fried? If the staff know a lot about their product, you can tell it takes care and attention.
“If they don’t know which fish it is, or if it has been in the hot box for 15 minutes, I don’t feel reassured that it will be a striking product.
One thing that stands out from the Fry list is that few of the stores that have been named in the top 50 are located in the big cities (there is only one in London, on the outskirts of the city). Many are in small towns or even villages. According to Phillips, prior to Covid, it was not uncommon for customers to travel an hour and a half round trip to visit Shap Chippy.
With that in mind, if you want good fish and chips, it’s worth the trip, argues Crolla. “It’s pretty common for businesses in small towns like Musselburgh to get overlooked in UK-wide competitions and not get the recognition they deserve, so it’s an amazing feeling to be named, ”she admits.
